​​​​​​​Honoring the Ainu Japanese culture, we brough a single, unique and  pure concept for Robatra Brand.
The Ainu people of Hokkaido are the focal point of Japan’s hidden wonders. The journeys of Ainu fisherman and their prolonged hunting quests inspired timeless elements in the culinary world. 
Ainu families sat around the Irori; which was the center point of their home, the Bitchotan charcoal was intrinsic to the ‘fireside cooking’ we now know as Robatayaki. 
The indigenous people of Hokkaido recognized beauty in the humble simplicity and epitomized the art of embracing what others may see as downfalls with the passage of time ; truly representing the Japanese philosophy of Kinstugi.

After WWII, sourcing food from land was no longer feasible; so people looked to the sea. 
That being fishing in Japan; encouraged different regions to embrace various cooking techniques. In 1950, the iconic movement of a mere family gathering concept in the Northern Japan, became the culinary hub of its urban focal point. 
With Sendai’s urban fabric filled with bustling streets, the first Robata opened its doors. The owner of the venue himself, spread the word and lured in large groups with his social talkative nature.
The city of Sendai echoed Hokkaido in its rare celebratory occasions, making it the perfect city for the Robata to flourish from and expand internationally.
